Unlike the Red, which is based on Xarel·lo and Macabeo with oak-aging, the Blanco starts from a different blend: 50% Garnacha Blanca and 50% Xarel·lo. That combination brings greater freshness, balanced acidity and distinctive fruity notes. Its maceration includes more than 40 botanicals, herbs, flowers and spices, with vanilla, wormwood, chamomile, mint, gentian and clove among the most notable.
Its sweetness comes from grape must nectar rather than caramel, giving it a brighter, more luscious profile with fresh grape nuances. Aging is also different: two months in stainless steel, preserving freshness and avoiding oak notes that might obscure the floral and fruity character.
Pale, bright and clean in the glass, it shows vanilla, mint and citrus touches on the nose. On the palate it is fresh and flavourful, with a well-defined citrus edge, a balanced bitter touch and a sweetness that recalls fresh grapes. Serve it well chilled with ice, lemon and two olives for the perfect aperitif. 🫒
