Padró & Co. Dorado Amargo Suave is the most distinctive and defining expression in the range: the only golden vermouth, and the one that most directly revives the spirit of the old homemade vermouths made in Camp de Tarragona before caramel became a common ingredient.
Its natural golden color comes not from coloring agents or added caramel, but entirely from the selected botanicals and the aged mistela that shapes the final coupage. The base wine is a well-structured Macabeo, chosen for its clean, neutral profile so it does not interfere with the action of the exceptionally bitter botanicals.
The process begins with a first infusion of high-mountain plants, which macerates and rests for 9 months in semi-new chestnut barrels. After this ageing, a second blend of barks, roots and bitter botanicals — cinchona, gentian, orange peel, rosemary and thyme — is added to reinforce its singular character. The gentian used in its making contains amarogentin, considered one of the most bitter substances in the world.
On the nose, it offers dried wild herbs and undergrowth, with a subtle mineral touch. On the palate, it is balsamic, refreshing and clean, with a very precise balance between gentle sweetness and a long, persistent bitterness. 🥂
