Yzaguirre Dry Reserva is the most distinctive and specialist expression in the range: the house’s only dry vermouth, created for palates that want all the character of vermouth without the usual sweetness of Spanish styles.
With a lower sugar content than the rest of the range, the botanicals and alcohol take centre stage, macerated and balanced for 12 months in oak barrels. Its pale yellow colour with golden highlights gives way to elegant citrus aromas, herbaceous nuances and delicate touches of vanilla and wood. 🌿
Among the most recognisable botanicals are angelica, wormwood and bitter orange peel, which define its dry, complex aromatic profile. On the palate, the opening is notably alcoholic, yet perfectly balanced by the wine’s acidity. It is highly glyceric, giving it a silky, smooth texture, with a clear presence of wood, herbs and spices, and a long, clean finish.
The winery positions it as the benchmark vermouth for bartenders and cocktail making: excellent in a Dry Martini, Negroni or gin-and-lemon serves, where its dryness and complexity add structure without overpowering the rest of the drink. 🍸
