Zarro Reserva is the premium expression in the classic Bodegas Sanviver range: the same artisanal spirit as the original Zarro Rojo, elevated by oak ageing that adds depth, character and a more layered vermouth profile. 🍷
It begins just like the red classic, with 30 days of maceration of botanicals in fortified white wine. From there, Reserva goes one step further: once maceration is complete, the vermouth rests in American oak barrels that previously held brandy for decades, absorbing the toasted aromas and flavours of this distinctive wood.
The result is noticeably different from the basic red. Its tawny, toasted colour is deeper and more intense, while the nose combines wood notes, raisins and bitter orange in a more complex and evocative profile. On the palate it is balanced and complex, with citrus, fresh herbs and a gentle bitterness that keeps the natural sweetness in check.
The oak ageing enhances intensity and adds subtle hints of vanilla and wood. The finish is long and persistent, with a lightly bitter aftertaste that turns each glass into a true tasting experience. Ideal with Madrid-style tapas, Iberian cured meats, aged cheeses and pickles, and a great match for game stews and traditional home-cooked dishes 🍇
